Raw Buckwheat Parfait with Maca Chia Pudding

The best part about this morning treat is that it's packed with so much super food goodness, featuring one super food that most people overlook. I'm not talking about the berries with their antioxidant packed profile, nor am I talking about the chia seed with it's omega-3 boost. The maca will help give you a push but it's still not my favorite super food in this parfait. The buckwheat is what I'm the most thrilled about in this dish, with it's large amounts of magnesium and other vital minerals, this underutilized seed grain is a super food in my book.
